Ube Cheese Pandesal

Ingredients

  • 6 cups all-purpose flour

  • 3 tsp instant dry yeast

  • 1/2 tsp salt

  • 1/2 cup sugar

  • 1/4 cup ELUFA ube powder

  • 3/4 cup warm water

  • 3/4 cup warm milk

  • 2 eggs, beaten

  • 1/2 cup melted butter

  • 1 tbsp ELUFA ube flavor plus

  • 1 cup ube halaya (elufa ube halaya mix) – for filling

  • 200g bar quickmelt cheese (for filling)

  • Bread crumbs for dredging

Directions

  1. Mix all together the all-purpose flour, dry yeast, salt and sugar.

  2. In a separate bowl, dissolve the ube powder in a warm water.

  3. In the mixture of flour, yeast, salt and sugar, gradually add the warm milk, melted butter and beaten eggs. Then put a small amount of ube flavor plus together with the dissolved ube powder. Mix evenly.

  4. Make a lightly flour surface and put the dough mixture and knead just until smooth.

  5. In a bowl, put a small amount of oil and spread it evenly and put the pandesal mixture inside and proof for 1 hour.

  6. After an hour, portion the dough into quarter and cover the remaining dough.

  7. Gently deflate the risen dough and form into a 20 to 22-inch log.

  8. Cut the log vertically in half that can make 7-14 portions

  9. Using the palm of hands, flatten each dough portion and place a piece of cheese in the center.

  10. Fold the dough around the cheese and form it into a smooth ball.

  11. Roll the dough in bread crumbs and arrange on a parchment-lined baking sheet.

  12. Bake in a preheated 350 F oven for about 20-23 minutes. Remove from the oven and allow to slightly cool as the filling will be hot!
