Ube Cheese Buchi

Ingredients

  • 1 cup ube halaya (usingelufa halaya powder)

  • 2 cups glutinous rice flour

  • 2 tablespoons sugar use more for a sweeter dough

  • ½ teaspoon salt

  • ½ cup sesame seeds

  • cooking oil for deep frying

Directions

  1. Using two teaspoons, form the ube halaya into one-inch balls. Arrange on a tray.

  2. Dump the glutinous rice flour and sugar into a bowl. Mix in just enough water to allow the mixture to come together into a ball.

  3. Using a small ice cream scoop, divide the dough into 15 portions.

  4. Roll each portion between the palm of your hands to form small balls.

  5. Arrange the balls on your work surface and, using your index finger, press the center of each ball to create an indentation.

  6. Drop the ube halaya at the center of each rice ball.

  7. Gather each ball to enclose the cheese filling.

  8. Roll the balls in sesame seeds to completely cover the surface.

  9. Heat enough cooking oil to reach a depth of at least three inches.

  10. Fry the ube buchi over high heat until the crust is crisp and golden brown.
